Strawberry & Cream Bites

I had an idea to create a sweet treat of some kind with strawberries and cream flavouring – because it’s that time of the year again when Wimbledon is on and strawberries and cream go hand in hand with this tennis tournament.

Now I’m no tennis player, but I do love watching Wimbledon, or any tennis for that matter, so I got to work creating a recipe for a sweet bite.  My first run of this recipe didn’t contain oats and whilst the bites were still amazing (my official taste tester’s words not mine!) they were a bit too sticky for my liking.  I then tried the recipe a couple of more times (as I always do with recipes) and added in the oats and they ‘soak’ up some of the stickiness but you don’t lose the intense strawberry taste along with the creaminess.

Whilst these bites don’t contain a load of preservatives, additives and other junk that a lot of the sweets you find in the supermarket do, they are still treats as the sugar content will still send your blood sugar levels crazy should you overindulge – you have been warned!

Cashew nuts are an excellent source of minerals, calcium, magnesium, iron, zinc and folate, which all contribute to bone health.  In addition, these also help produce collagen which is vital for healthy skin.  Cashew nuts are also a great source of healthy fats which help protect against heart disease.

 

Ingredients

-1/2 cup cashews

-1/4 cup freeze-dried strawberry powder

-3 Tbsp. coconut cream

-2 Tbsp. maple syrup

-1/4 cup oats

-1/8 tsp. vanilla extract

How To Make

Place the cashews in a food processor and process until coarsely ground.

Add all the remaining ingredients and process until well combined.

Pour mixture onto prepared baking sheet and press down and shape into a rectangular shape approximately 5mm thick, cover with clingfilm.

Place in the fridge for a couple of hours until firm then cut into squares.

Store in an airtight container in the refrigerator.
